Vinification
Pick the grapes at full ripeness. Sun dry for approx. for 1 – 2 weeks (after sensory and visual evaluation). Distend crash and press the grapes. Inoculated the grape juice with selected dried gist capable to ferment at high sugar levels. Monitor the fermentation and when the residual sugars reach 80-100 gr/lt we chill the wine and addition the SO2.

In the vineyards:
The only grapes with origin other than Ancient Nemea, Muscat grapes are planted in Rio close to the city of Patras. The vineyard is established at sandy soil and at low yields this early harvested variety produces grapes rich in flavor and aromas.

Comments from the winemaker:
The catalytic influence of the sun on the grapes gives unique results. Aromas of mint, basil and dried herbs are giving place to the ripe characters of bergamot, peach, apricot, orange and raisin. The aromas are transformed into flavors flooding the mouth. Acidity that refreshes and tones up the palate. A fragile balance between acidity and maturity that fascinates.

Food Suggestions: sweet, fruits and desserts, tiramisu, foie gras. Drinking also as a dosestif
Best served at a temperature of 4-6oC
