Vinification
Pick the grapes at full ripeness. Sun dry for approx. for 1 – 2 weeks (after sensory and visual evaluation). Distend crash and press the grapes. Inoculated the grape juice with selected dried gist capable to ferment at high sugar levels. Aging in barrels for 3-5 years.
In the vineyards:
Back to 1999 we decided to make a dessert wine from the local variety of Nemea, Agiorgitiko. We thought to take advantage of the microclimate of the region, allowing the grapes to over mature on the vines and following that sundry them under the sun for approximately two weeks. After the sun-drying process and we collected the remaining juice into the grapes and macerated with the skins for a short time to increase the complexity, colour and mouthfeel. On January 2000 we filled two French oak barrels and waited patiently for five years. Something that started as a game ended as something great.
Comments from the winemaker:
An excellent dessert wine made from sundried grapes of Agiorgitiko variety. Intensely fruity wine conserves the characters of Agiorgitiko: cherries, plums, blackberries, gooseberry. Discreet presence of oak from the long aging in barrels completes and softens the aftertaste. A unique wine for special cases.
Food Suggestions: sweet, fruits and desserts, dark chocolate
